Manuel Bouchard
Iwas born in Turin in 1988. After moving after a few months from birth, with my family in the Pinerolese valleys, I attended the hotel school in Pinerolo, graduating in the kitchen sector in 2008.
The first experiences already during school, the most important to be counted in 2006 at the Flipot in Torre Pellice, a historic 2 Michelin star now closed for a few years and Vicolo Santa Lucia in 2007, 1 Michelin star, in the prestigious Carducci hotel in Cattolica.
After graduation I had the first experience in the Langhe with which I fell in love and stayed for 2 and a half years.
Then the desire for new experiences was felt and I went to the courtyard of important restaurants, Il Trussardi alla Scala in Milan, which at the time had 2 Michelin stars, afterwards I was at the Piccolo Lago in Mergozzo, also 2 Michelin stars and finally at the Villa Crespi in Orta San Giulio (2 Michelin stars) with the famous chef Antonino Cannavacciuolo.
After my wanderings for various restaurants, I landed, driven by the desire to return to the wonderful Langhe context, in 2014 at the Antinè in Barbaresco, when I was just 25 years old.
I still manage the restaurant with my partner Monica, the room manager, and we offer a Piedmontese cuisine in a modern key with great care and attention to the great raw materials that our territory offers, and a large cellar (about 1000 labels) focused mainly on wines of the territory with excursions in Italy and in the rest of the world.
